5 minute healthy egg & potato breakfast dish

5 medium-sized eggs
5 small potatoes
A pinch of salt
2 onions
A handful of coriander
Chili powder (optional)

Boil the potatoes, peel & mash them up.
Evenly slice the onions and chop a handful of coriander, |
Add them into the mashed potatoes |
Add a pinch of salt, along with any desired spices |
Mix them thoroughly |
Beat 5 eggs, adding a pinch of salt and pepper |
In a large bowl, add the mashed potatoes and egg |
Mix them thoroughly creating a thick consistency |
Heat the frying pan along with a decent amount of oil in it |
Using a large spoon, carefully scoop the batter and place it into the heated pan |
Keep frying small-sized omelets |
Cook until the sides turn crispy and golden brown. |
Transfer it to a dish, and allow it to cool completely |
